I have a customer that would like to float mount a large piece. The paper is medium weight and is 35" x 68". Just wanted thought on what to mount it with. Thanks.

Is the are just decorative, for a museum, or somewhere in between? Are you receiving this "art" originally flat or rolled?

My go to was Hiromi Paper's Senka-shi Thin or Medium (depending on the weight of the paper to be hinged) with two or three hinges at the top being put through slots in the backing with two loose hinges in the bottom corners. You can put the bottom hinges through slots or just V-hinges.

It’s decorative and rolled up
decorative? Yep, dry mount that sucker!
You can always cut a piece of prepared mounting board(MountCor, Kooltack, etc) a little smaller than the piece, center and tack iron in ONE spot so it doesn't shift around once you start pressing it... then glue that board down to your float mat for a raised effect,
or you can use tissue to mount it straight onto a piece of matboard.

Or, you can just hinge it as otherwise suggested. It will likely never be completely flat though. The drymount will help correct that curl.
