Thinking about buying an AMP U-300, used in good condition. I've only used Cassese so Amp is new to me. Only drawback is that it looks like you have to change the nail head to accommodate different v nail sizes. Seems like this would be a real pain, as with many mouldings we use two different sizes of nails. Does anyone have a work-around for this?
 
Yes, changing the nail head on a U300 takes a minute or two longer than changing the cartridges in your Cassese machine, but an awful lot of framers do it all the time.

Would it be reasonable to use just one size of v-nail in each frame? They stack well.

I have 2 older gen AMP V-nailers. VN4
I've had luck using a larger than needed Nail Head for short periods of time.
Our general purpose nail is 10mm. If we need to install about a dozen 7mm that usually goes fine.
The only real downside is that the stack of V-nails tends to slide toward the face of the V-nailer, and away from the track they rest in. This can cause a misalignment and jam.
We also tend to stack nails 2 10mm nails when needed.
