I am thinking of buying a quart of Beva gel so I can fix a hole in a painting I have (it's not a Picasso or anything, just something a friend gave me years ago that Im finally hanging... it'll be a good learning experience for me to fix this). What other types of things can I use the Beva for besides lining canvas? Can it be used as an adhesive for wrapping mats with fabric? Anything I should be wary of with this stuff?

At his WCAF workshop, Paul McFarland described using it (with permission) as the adhesive for hinging a very large and heavy work on paper, where starch paste would not have the required strength.

I think you will find that BEVA 371 film is more user friendly and has more benefits than liquid BEVA.
