Micro Wave

We do....but we're using pure rice starch from Lineco, not wheat paste.

Take a shot glass (one of the V shaped ones, not the tall ones). Mix it 3 parts water to one part powder. Micro wave for 5 seconds. Perfect every time. We only mix about a teaspoon at a time.

I still use the double boiler method. Actually, it is an egg poacher on a hot plate.

I like the idea of being able to tell when the consistency turns just right so I can remove it from the heat.

I would be afraid that I’d overcook it if I zapped it in the microwave.

I can’t even soften butter in that contraption without burning it.

I use the microwave - but like Maryann I cook Lineco rice starch. It's really easy to overcook, so go easy. Better to cook 5 seconds at a time than 30 seconds and end up with a rice pancake. Microwaves are all different. Mine usually takes about 15-20 seconds for a 1/2 teaspoon of powder to 2 1/2 teaspoons of water.

You can usually control the cooking better and avoid problems if you make slightly larger batches at a time. I use a one part mixture of rice starch to five parts water, usually measured in teaspoons. The greater vloume and mass means that it will cook more evenly and that you don't have to take it our every five seconds and watch it like a hawk to avoid overcooking.

Cooking for ten seconds at a time and stirring thoroughly between intervals make for a nice smooth paste; usually takes 30-45 seconds.

My No-Fail Recipe for MY Microwave

Mix five parts water to one part wheat starch in a clean ceramic mug

Stir, not necessarily thoroughly

Nuke for 10 seconds on high (I stand there and count it)

Stir

Nuke for 20 more seconds and it is perfect every time
