Can you do a hollow grind? Morso specifies that their chopper knives should be hollow-ground (I don't have my manual with me but they specify a radius for hollow grinding). Of the two pick-up-and-deliver sharpening services in my state, one stated that they weren't equipped to do a hollow grind, while the other didn't even know what a hollow grind *was*. Right now I'm shipping them out to Tech-Mark in Arkansas, but I wouldn't mind finding someone closer...

I know what hollow grinding is. I grind the edges of the blades with a carbide stone at a 30 deg angle. Just using a round stone produces a hollow ground edge...but I do not remove as much material as Morso may suggest. I think removing too much steel is not necessary and can weaken the edges. I put about a ~1/4 in bevel on the edges at about 30 degrees sharpened to a razor edge. I have never had any complaints.
