I usually do all the canvasses by myself by hand but the gallery ones i occasionaly have the company that prints them for me strech them as well....the question is :
Whats the best way to finish the corners? do i need to cut a little bit off?
ive seen some gallery wraps that the corners are not to bulky, does that mean they were cut in a certain way?

On the ones that I print, I make a slice in the corner where the 45 degree folds. No material is removed, but the layers of canvas are much flatter then if that were a fold.

On other peoples work, I just fold it and let it be bulky.
 
On thicker canvas I also carve out the corner of the stretcher bars so the fold lies below the level of the bars.
 
Gallery wrapping correctly takes some practice. Best to take a class, such as those offered at WCAF or have an experienced framer demonstrate the technique. Then, practice will make you proficient. I saw two demos, and when I tried it, it wasnt the same. Many canvases later, I am still improving.

I find the fold needs to be done correctly without going over the edge. Also, clipping the excess will remove the bulk and give a smooth wrap.
