would this work the same as a daul monitor card for the IF software set up with two monitors?

In most cases a dual monitor setup "Enlarges" your desktop and gives you more screen geography. So, you can do things like have the finished display on the monitor the customer sees and the application where you do your work on the monitor only you see.

With a splitter, both monitors are identical.

It would work. The customer would just see everything you do.
