in this months PFM magazine there is an article about mounting options for documents. I'm wanting to mount a double sided document between two sheets of mylar or Melinex film as the instructs, but where do you get the clear film sheet or envelopes?

which products are best, have the least glare or are most protective to the document itself?

You need an archival grade polyester film University Products have a huge range.

If you only need a small amount have a look at there polyester pockets/sleeves

The gauge I sell most of is 75micron I don't know what that is equivalent to in the USA, hopefully somome will jump in and do the conversion.

Ditto on Pat and Attach EZ. I did an article a few years back.... the stuff was a dream
to work with.

We had a customer look at the job I did for him and he scrunched up his face.....
"I thought you were going to wrap some kind of clear plastic or something around
this to protect it?"
(some people just don't want glass on their needle work.... we have an alternative)

"Touch it."

He rubbed his fingers across it...... "Ooooooh.... Nice."

Hostophan or Melinex are probably the best brands to use. For such an application as yours, I'd use use 5 mil thickness for the support it will offer. It's available from Gaylord (Melinex brand only).
