I've been having problems with the thermometer on my 500T seal press. The knob had to be turned to 250deg to get the thermometer to read 200. Then the thermometer would drop 50 deg in less then a minute.

I stole my wife's meat thermometer and shoved the probe onto the plate.

Found out I needed more thermal seal applied to the thermometer and reset the knob to 200deg. Works great!

If the 500T is the one we used to call 'frog eyes', the thermostat was always going out. SEAL made available a new, transisterized replacement thermostat (which I bought and installed) but, like so many things that are 'new and improved' it was not much better than the old replacement thermostats. Check with SEAL, they probably have a couple hundred sitting in a box somewhere.

Also, from time to time you can check your press for proper heat temperature and distribution by pasting those little Temperature Strips (by SEAL) on a scrap board. You put it in the press for awhile and then take it out and look to see how they melted. Pretty nifty method to check proper heat.

Hope this is helpful.

Its 10 years old with lights But it's not the old waffle model. Yes its still got the old mechanical thermostat. I'm cheap I file it like points on an old car. Thats why I needed to adjust the knob.
