Your best bet may be fabric-wrapping your own. Some plain crescent matboards come as large as 60x104, but you would just need a 48x72" or to splice mats together to get the size and shape you need. If you aren't already familiar with Franks Fabrics, check them out. They could make the whole mat for you but shipping may get outrageous. They have tutorials on how to fabric wrap mats so it would be more reasonable to just order fabric from them(or another supplier) and get an appropriately sized mat from a regular distributor, then glue it and wrap it yourself.
 
The Hand wrapped fabric mat that Mary Beth suggests looks great.
This would have the bevel be wrapped in the fabric as well as the surface.
If you want to show the bevel, you can mount the fabric to the mat first, then cut the mat as normal.

A word of caution: A mat that size, using 4-ply matting, will require hand finishing rather than just popping it in a heated vacuum press (unless you happen to have one of the Magnaplex presses). It will also be a little unwieldy to move around during the process.

I'm with Wally on this one. A wide, fabric covered liner would be the way to go. It will be sturdier, easier to handle, and the shipping won't kill you if you get it unassembled.
